Well, this has been kind of a lazy food week so i don't really have anything particularly interesting today.  blerg.  blergy week in general.

However, i did discover my favorite green smoothie of all time. ok my favorite so far.  i haven't tested out very many recipes, so maybe i don't know what i'm talking about. But, I do know this.  Smoothies with a million ingredients bug me. 1/2 c of 10 different types if berries is too much.

But I really like this one from the Gracious Pantry. 3 ingredients and it tastes so GOOD!

Clean Eating Coconut Milk Smoothie
(Makes 2 servings)
Ingredients
1 cup coconut milk
1 banana
2 cups raw spinach
Directions
Step 1 – Place all ingredients in a blender and blend until smooth.
Drink and Enjoy!

Adding protein powder or tofu would give you protein and would still be really yummy.
A 4th ingredient maybe useful from time to time.

And here's the goods on coconut milk.  I guess you can use it from a can which is crazy convenient but you can also find it in the refrigerated section. It's made by SILK and its really, really yummy.

So there's that.  Now I ask you! Any super simple green smoothies that you LOVE?

I remember my sister kelly talking about one that is spinach, ice and pineapple juice or something.
What is that one kelly?  Carrie T? You're a healthy lady. any awesome suggestions?
And does anyone use Kale?? i have some in my fridge and may toss that in this morning.

I'm dying to hear you ideas.
Let's get our smoothie on!!

p.s. i must have been thinking out loud.  this is what i found when i finished this post.  babies blending up water and half a zone bar.  now theres a suggestion!

p.p.s. what you don't see is the second i'm done taking this photo, the two of them begin a screaming  power struggle over the vitamix wand thing nearly spilling the whole pitcher and then simon pulling out some of penny's hair beacause i just took the whole thing away. NOT THE HAIR, Simon, she doens't have very much to start with, geez!!

  1. I've used kale but couldn't get it to blend up as nice as spinach. But maybe in your Vitamix it would be better. I always put spinach in smoothies. The best! Kids drink it. Voila. I like buying Kefir (low fat, plain) and doing Kefir, spinach, banana, and maybe one more frozen fruit or berry. Frozen mango is good. Sometimes I'll put a little vanilla in there for flavoring, or a squirt of real maple syrup or agave (but usually banana sweetens it up good). Mmmmm. I need all these ingredients right now. I want one! Happy to see you tomorrow btw. :)

  2. Yes! Thank you Beth. So here's a question. With yogurt do you add juice too? Orange, apple or just water?

  3. the smoothie sounds great and protein powder would be good esp since i'm loving the vanilla i got (she types while eating jack n the box...oops). Here's to 2012 right hehehe.

i have tried a bunch though. with pineapple, with yogurt or just random stuff i have in my fridge. but i don't have a vitamix.

that jlo thing was super funny. and the award was hilarious!

  4. Totally trying this tomorrow, love the few ingredients. I too hate smoothies that require you to spend your ENTIRE grocery budget on frozen fruits. The one we do most often is just like you said, a can of pineapple chunks, a few handfuls of spinach and some ice.

  5. Hey Em!

Se here is the BEST healthy smoothie. I am completely addicted to this stuff for a few reasons. 1) its super healthy 2) its super tasty and 3) It keeps me full for HOURS!!!!! Go get these ingredients and keep them on hand for this drink. I have a special drawer in my kitchen where i keep the smoothie stuff including the mixer and vitamins. Everything except refrigerator stuff goes in this drawer. That way I'm not searching every cupboard for ingredients.

I don't have exact amounts because I just add a little here and there.

    Smokin' smoothie

    cold water
    a little ice
    dab of almond butter
1/3 banana (not too much or it gets gooey)
    scoop of protein powder
dab of vanilla greek yogurt (fat free)
1 T. hemp seed (healthy and filling)
1 T. salba (healthy and filling)
    handful of spinach
I also throw in a few blueberries if I have 'em.

I use THE MAGIC BULLET to whip up this bad boy and its perfect. I also have a vita mix and use it if I'm making a big batch for the fam. Otherwise, I stick to the bullet. This smoothie is so filling and perfect after a hard workout. Try it and see....

    xoxo

  6. My next door neighbor makes a great green drink with Collard greens, kale, pineapple, banana, green apple, or whatever fruit you have in the fridge to sweeten it up. And she has another fabulous one with cucumber, lemon juice, ice and mint (with some added sugar) that I LOVE.

  8. that one sounds good julie. i wonder where you buy salba? do you have to go to a health food store for that?

if you get kefir it's liquid. like liquid yogurt, so you don't have to add juice. i like to add frozen fruit for the texture though. make it's icier.

  9. you can also get coconut milk in a box like soy milk at TJ's. the unrefrigerated kind that you put in the fridge once you open. thats actually my favorite.
