stuff

penny is very in tune with her heart lately. her heart breaks for just about anything. all made up songs include her heart dying or breaking.  Yesterday it was her heart and her brain.

"My heart says i'm tired and my brain says i'm hungry."  Very intuitive.

when i made her leave chloes house to pick up sophie, she was super upset and said that she didn't like anyone one in our family and she wanted to leave our house forever and go to a new house.  somedays i feel like packing her bag for her.  oh, just kidding! sort of....

Very dramatic, that one.

she had a teeny sip of diet coke the other day and said in a quiet, almost reverent tone, yeeaaaahhh, i like that.

hahaha! uh oh!  funny girl.

simon is HILARIOUS.  he is talking a ton. today i was driving owen to school and i let them just sit in regular seats since it's like half a block away and he wanted to come up front but i said, simon, go sit in the back.

his response was, Ok, FINE! fine, i go in da back.   whaaatttt? like he's a teenager or something?

speaking of owen, he woke up yesterday and was "having trouble breathing" so i let him stay home in the morning and then as his mysterious condition faded i decided he probably just wanted some mom time. so i let him stay home and i took him to the library,  his favorite place in the whole world.   He then read for like 3 hours straight and finished two whole calvin and hobbes books and one chapeter book.

he also hasn't had a bed since i took down simons crib like 3 months ago. He sleeps with me or sophie or sometimes we move simon and he gets an actual bed.  (talk about the forgotten middle child, poor dude!) anyway, last night we switched sophie's queen for owen's twin.  she was less than excited about that but now the boys can share and she gets a tiny goldilocks looking bed.

we shall see how long that lasts, i'm sure bunk beds are in our future.

And finally, here's a yummy recipe for this rainy wednesday! Only 5 ingredients, people! totally my speed.

Flourless Double-Chocolate Pecan Cookies
I am about to show you how to make really chocolaty, really delicious cookies. They also happen to be gluten-free, because they don't call for flour, but you don't have to be on a special diet to enjoy them -- I do it all the time! You can even make these cookies for Passover, but be sure your confectioners' sugar is kosher for Passover. This recipe calls for pecans, but you can substitute walnuts, almonds, or your favorite nut. Hey, try a few different kinds. You'll never believe just five ingredients could taste this good!

gluten-free!INGREDIENTS
3 cups confectioners' sugar
3/4 cup Dutch-process cocoa powder, spooned and leveled
1/2 teaspoon coarse salt
4 large egg whites, room temperature
5 ounces bittersweet chocolate, chopped
1 1/2 cups chopped pecans (or other nut)

GET COOKING
1. Preheat oven to 325 degrees. In a large bowl, whisk together sugar, cocoa, and salt. Add egg whites and stir just until incorporated (do not overmix). Stir in chocolate and pecans.
2. Drop 1/4 cup measurements of dough (you can use an ice cream scoop), 3 inches apart, onto two parchment-lined rimmed baking sheets. Bake until cookie tops are dry and crackled, about 25 minutes, rotating sheets halfway through. Transfer sheets to wire racks and let cookies cool completely. (To store, keep in an airtight container, up to 3 days.)
