2 recipes for Grandma

Guess what I remembered last night cuz I am never on facebook anymore??   It was GRANDMA Chamberlain's Birthday yesterday!! (that sounds like the biggest cop out ever except technology really is taking over my brain.  On Saturday i had the babies with me in dougs car and i got out and somehow the doors locked but the remote keychain thing wouldn't unlock!  I pressed it and pressed it and nothing was happening.  my phone was in the car with the bag and both babies were strapped in tight, we were stuck!! so i asked someone in the parking lot if i could use their phone to call AAA except i didnt have the number...it was in my phone in the car! so they suggested i call someone else who could call AAA for me.  So, i called doug and told him was was going on. he said his response slowly to help me down from my panic... place the key in the key hole on the door.  turn the key to unlock the door."  hahahaha, fo reals. 

ANYWAY....  Happy Birthday, Grandma!! We love you!



So in honor of Grandma I will post 2 recipes.  Both containing bananas because she makes the best banana pancakes.

This one is her recipe: Grandma's Fuffins (so titled by the utah cousins)

3 very ripe bananas
1/4 c canola oil
1 egg
1 egg white
1 t vanilla
1/2 c brown sugar
2 c flour
1 t baking soda
1/4 t salt
1/2 c chocolate chips
1/2 chopped walnuts (optional)

Preheat oven to 375.  coat 12 cup muffin tin with nonstick cooking spray.  in bowl, mash bananas, add oil, egg, egg white, vanilla and brown sugar.  stir well. In large bowl, whisk flour, baking soda and salt.

Pour in banana mixture and stir.  Fold in chocolate chips and walnuts.  Fill muffin cups 2/3 full. Bake 25 minutes.  Cool in muffin cups 5 minutes.

Panini with Banana and Chocolate Hazelnut Spread aka Grilled Nutella and Banana Sandwich.  Only 171 cal with 7 gr fat and 5 protein! not bad for melty chocolately deliciousness!


by the way, this morning Owen was all excited because it's red ribbon week at school and there is going to be a police helicopter landing in their playground today.  This was his perspective.
